A variable speed drive allows the processor to tailor the rotational speed of the drum to the product. Faster speeds will give a more aggressive tumbling action and will reduce cycle times. Fast speeds are best suited for firm textured meats. Slower speeds are much gentler on the product and are best for soft textured meats. Slower speed require a longer cycle time.
